The latest buzz in the greening of the travel industry is, in fact, literal , as more and more hotels are adding beehives to their rooftop kitchen gardens and grounds. Not only does the addition of the hives help the environment by providing bees to pollinate area gardens and parks, but the honey can then be harvested for use in the hotel restaurants and bars.
Fairmont Hotels & Resorts were among the first hotel companies to get into the act. Using the honey from their new rooftop hives, they've even
created several new cocktails. The Bee-tini at the Fairmont Washington, D.C. is a mix of Belvedere Pomrancza vodka, clover honey, fresh grapefruit juice, mint and grenadine. The Festival Buzz at The Fairmont Royal York in Toronto, is a combination of white peach puree, Royal York Honey and Moet Chandon champagne.
Also getting into the act is The Ritz-Carlton in Charlotte, North Carolina, which recently added two beehives to its rooftop chef’s garden. It is expected that by the time the hives are fully developed this summer they will be home to 60,000 honeybees that will generate 70 pounds of all-natural, chemical-free honey.
